About The Maker

In 2014, Karen launched a Kickstarter campaign to fund and develop Kraut Source, a stainless steel fermentation device that fits onto standard canning jars, for small-batch ferments such as sauerkraut, pickles, and kimchi. Karen is passionate about inspiring DIYers to make their own live-cultured, fermented foods. Kraut Source helps ensure successful fermentation for beginners and experienced fermenters alike!

At this Maker Spotlight, Karen will demonstrate making a lacto-fermented giardiniera, the popular vegetable condiment originating in Italy, and commonly found in Chicago delis. Many preparations call for pickling in vinegar, sugar and olive oil, however Chef Karen's recipe turns this all-time favorite into a gut-friendly, sugar-free option. Come learn all about small-batch fermentation and get empowered to make your own!
