CONGRATULATIONS ON ADOPTING YOUR NEW KITCHEN PET!

SCOBY is an acronym that stands for Symbiotic Community of Bacteria + Yeast

We recommend storing your new Kombucha SCOBY at room temperature, out of direct sunlight, until you're ready to brew. There is no need to refrigerate your SCOBY, in fact we discourage it!  For best results, use your SCOBY to make your first brew within 3 months of purchase. 

To make your first batch of kombucha, follow the recipe instructions here.  

Your SCOBY is floating in approximately 2 cups of fermented kombucha tea. This amount is suited for a one-gallon batch. Want to make a two-gallon batch? Wait until your second kombucha brew so you can save double the amount of fermented tea (about 4 cups). While you only need to save one layer of SCOBY no matter the batch size, it's important to double all the other recipe ingredients to make a two-gallon batch!
