Chef Bruce Hill has spent decades cooking in professional kitchens in the San Francisco Bay Area. The Chef’s Press® grew out of a simple problem he encountered repeatedly as a chef: food naturally curls and lifts away from the cooking surface, preventing even browning and slowing down the cooking process.

Bruce developed The Chef’s Press® as a lightweight, vented, stackable, weight-adjustable stainless steel cooking tool that improves contact with the cooking surface without crushing the food. Today, Chef’s Presses are used by professional chefs and home cooks around the world.

At this Maker Spotlight, Bruce will demonstrate how he uses The Chef’s Press® to cook maitake mushrooms, showing how improved surface contact creates deep, even browning and a beautifully crisp texture while keeping the mushrooms tender. Guests will be able to taste the finished maitake mushrooms and learn practical techniques they can use in their own kitchens.
