CONGRATULATIONS ON ADOPTING YOUR NEW KITCHEN PET!

When you bring your new sourdough starter home, we recommend storing it in the refrigerator until you are ready to feed it. Ideally, feed your starter the same day it is purchased, or within 3 days of purchasing.

FERMENTATION NOTES

Sourdough starters are not ready to use in a recipe straight out of the fridge. The cultures are too cold and sluggish. So before you begin a recipe, feed your starter and leave it out at room temperature for 6-12 hours to wake up the cultures and get them ready to leaven. This is referred to as "activating your starter".

To keep your culture alive, we recommend storing it in the fridge and feeding it once a week. If you are baking often, you can leave your starter at room temperature and feed it daily.
