Elderberry Soda

INGREDIENTS

2 1⁄2 cups water

1 whole clove

1 cinnamon stick

1⁄2 cup fresh or dried elderberries

1-2 tbsp freshly grated or dried ginger

3-4 cups finished water kefir, (grains removed)

Honey (optional)

Heat elderberries, water, cinnamon, ginger, and cloves in a saucepan over low heat. Simmer for 30 minutes. Cool and strain through a fine mesh strainer. Discard the spices. Add 1 cup of elderberry tea (or more) to finished water kefir or simply combine to taste. Whisk in honey if you prefer more sweetness. Bottle following instructions on Bottling & Carbonation.
