Coconut Water Kefir

INGREDIENTS

1 quart coconut water

1-2 tbsp active water kefir grains

Juice of 1 lemon (optional)

If using dehydrated kefir grains, follow included instructions to activate water kefir grains. Place all ingredients in a glass jar. Cover with a loose lid or muslin cloth secured with a rubber band. Let ferment in a warm spot, out of direct sunlight for 24-48 hours. Using a stainless steel bottling funnel, strain the coconut water kefir into a bottle making sure to catch the grains. Then transfer the kefir grains into a fresh batch of Basic Water Kefir. (Ideally, this should be done in between making batches of Coconut Water Kefir. The sugar-rich water will feed and refresh the culture and keep them healthy. Grains cannot thrive solely on coconut water.) Bottle following instructions on Bottling & Carbonation.
