Baek (white) kimchi is a slightly effervescent, non-spicy napa cabbage kimchi that's filled with funk without the heat. It's tart, salty, pleasantly refreshing, and gentle on the gut. Use the brining juice in cold noodle dishes, to jazz up dressings, or drink it straight.
